Amazing Granola Crunch

Gulten Free Granola Crunch

Preparation time: 10 minutes

Cooking time: 30-40 minutes

Ingredients

1 ½ cups White Quinoa or Quinoa flakes

1 ½ cups Buckwheat grouts

1 cup Amaranth Flakes - Rolled

¼ cup Almonds

¼ cup Cashews

¼ cup Macadamias

¼ cup Walnuts

1 ½ cups Shredded coconut

1 cup Saltanas

1 cup Goji berries

½ cup Linseed

½ cup Sunflower seeds

½ cup Pumpkin seeds

1 tsp Cinnamon

½ cup Canadian maple syrup (or coconut syrup, agave syrup)

½ cup Coconut oil

Directions

Pre-heat oven to 150 degrees Celsius and prepare baking trays by lining with baking paper.

Chop or food process nuts to small pieces, mix all dry ingredients except saltanas and goji berries. Add maple syrup and melted coconut oil and mix thoroughly.

Spoon mixture across baking trays with a thin layer and bake for 30-40 minutes or until golden brown. Allow to cool, mix in saltanas and goji berries.

Store your granola in an airtight container to enjoy every day. I love this with almond milk or coconut milk.

Variation

Add ½ cup of Cocoa powder and ½ cup of Cocoa nibs with mixture to cook for a yummy chocolate flavour.

You can add whatever you want, chia seeds, dried berries or honey instead of maple syrup.

If you can’t eat nuts, add more Qunioa and seeds to the mixture instead.
