Chocolate Date Cake

GF Chocolate Cake

Preparation time: 15 minutes​

Cooking time: 30 minutes

Ingredients

1 cup buckwheat flour

1 cup rice flour

2 tsp baking powder

1 tsp bicarb soda 3 tsp cocoa powder 1 cup brown sugar (or alternative sweetner) 2 tsp vanilla bean paste ¼ cup medjool dates, cut into small pieces 4 eggs ½ cup almond milk

Directions

Pre-heat oven to 1800C and prepare your lined or greased cake tin.

Place all dry ingredients together in mixing bowl. (Keep some medjool dates for the top of the cake)

Add wet ingredientsand mix with a spatula until combined.

Mixture is ready for cake tin, use spatual to scrape into tin. Place medjool date pieces on top of cake you had put aside.

Bake for 20 mins and check with skewer into centre. If not ready, cook for another 10 minutes but be careful as it can dry very quickly and may not need the full 30 minutes.

Allow to cool in tin and then transfer to cooking rack if you wish to ice the cake.
