Raw Super Energy balls

Preparation time: 10 minutes

Ingredients

½ cup almonds

½ cup walnuts

1 cup medjool dates

¼ cup linseed

¼ cup chia seeds

½ cup goji berries

¼ cup cocoa powder

½ cup desiccated coconut

¼ cup sunflower seeds

¼ cup coconut oil

Directions

Place the almonds, walnuts, linseed, chia seeds, desiccated coconut and sunflower seeds into the food processor until finely chopped.

Add cocoa powder, medjool dates and goji berries and mix with pluse to start. You may need to separate the ingredients and do in two lots if your food processor can’t handle it. Add water as needed to get the mixture moving and appopriate consistency.

Once all the ingredients are mixed, add melted coconut oil as this will thicken and start to set the mixture. I find if I put this in the food processor, it always get stuck and can’t mix properly.

To coat the balls, you can use whatever you like but I use desiccated coconut and chia seed mix.

Wet hands, roll tablespoon of the mixture into balls with your hands. Keep wet with water or coconut oil to stop mixture from sticking to hands and rolling freely.

Then coat your balls by rolling them into the mixture. Store in a plastic container for the week. If you don’t think you will get through all of them, you can freeze them too.

I love energy balls, they make great snacks to keep you going.
