Raw Chocolate Recipes


I absolutely love chocolate, most people do! So here is a Dairy free, Gluten free and refined sugar free version to make some raw chocolate.

I will be using Cacao powder and Cacao butter which is the 'raw' chocolate. This is dried at a low temperature so it maintains all the yummy goodness, unlike the typical cocoa powder you buy from the supermarket or get in your standard chocolate block.

Just remember - Even though the raw cacao contains some good nutrients, it still contains high content of fat, sugar (depending on the sweetener) so eat in moderation. Raw cacao is also very acidic so please consult your local medical practitioner if you have any health concerns before consuming large amounts of raw chocolate! Cacao is a stimulant similar to caffeine so shouldn't be consumed in the evening. Enjoy!

Raw Chocolate Recipe 1

Now this one you can use either the Cacao butter or coconut oil. If you want that strong chocolate aroma, go for the cacao butter, plus its slightly less in saturated fats!

Serves: Makes approx. 18

Time to make: 10 minutes

Ingredients: ½ cup raw cacao powder (less if you don’t want it so dark)

½ cup raw cacao butter or coconut oil

1-teaspoon vanilla bean paste (or 1 vanilla pod, slit & scraped or natural vanilla extract)

2 tablespoons unrefined sweetener of your choice

Pinch of salt

Any additions you want such as edible essential oils, nuts, shredded coconut, puffed quinoa, freeze dried fruit & berries

Method:

  1. Put cacao butter in a bowl over a pot of simmering water (double boil) and stir with metal spoon until melted. Or melt coconut oil (if solidified)

  2. Once melted, remove from heat. Add in cacao powder and stir with metal spoon. Then add in sweetener and any additions.

  3. Whisk with stick blender or you can do by hand – whisk baby! This emulsifies the ingredients together to slow down the separation of the sugar to the other ingredients

  4. Then get into your silicone moulds or spread onto a grease paper lined tray ASAP and into the freezer to set!

  5. Wait 30 mins (depending on your freezer) and you can move them into an airtight container in the fridge to enjoy when you want a cacao hit!

Raw White Chocolate Recipe 2

Now this one is without the cacao powder to make your white chocolate dairy free, yum!

Serves: Makes approx. 18

Time to make: 10 minutes

Ingredients:

½ cup raw cacao butter

½ cup coconut oil

1-teaspoon vanilla bean paste (or 1 vanilla pod, slit & scraped or natural vanilla extract)

2 tablespoons unrefined sweetener of your choice

Pinch of salt

Any additions you want such as edible essential oils, nuts, shredded coconut, puffed quinoa, freeze dried fruit & berries

Method:

  6. Wait 30-60 mins (depending on freezer) and you can move them into an airtight container in the fridge.

With the coconut oil, these need to remain in the fridge or next to an ice block in the cooler bag to stay solid.

Raw Paleo Creme Eggs Recipe 3

Now this one takes a little bit longer as there are some wait times in between the preparation time. But they are totally worth it!

Serves: Makes 8 medium eggs

Time to make: 20 minutes (not including wait periods for setting)

Ingredients:

White Filling

½ cup macadamia nut butter

¼ cup macadamia nuts, soaked for 30 mins and rinsed

½ cup maple syrup or sweetener of choice

1-teaspoon vanilla bean paste (or 1 vanilla pod, slit & scraped or natural vanilla extract)

½ cup coconut oil, melted

Yolk Filling

⅓ of the white filling mix

½ teaspoon turmeric

Chocolate Coating

½ cup raw dark chocolate (chopped or broken up)

½ cup raw DF Milk Chocolate (such as a Coconut Mylk Chocolate)

Alternatively, you can make your own raw chocolate

Note:

To add your sweeteners to make chocolate -

Do this after you have slowly melted the cacao butter and added the cacao powder; or if you are using coconut oil, the same process.

Now add in your sweetener of choice and you will need to whisk this up for about 10-20 seconds, just so you see the chocolate colour change to almost a caramel colour.

This just emulsifies the sweetener to the oil so that it doesn’t separate quickly. Then you should have time to get into the moulds or spread out on a tray with greaseproof paper and pop into the freezer to set!
